Here’s some Quarantine-Friendly recipes to make while at home

Under house arrest due to curfew, quarantine and COVID-19 in general? Fear not, you don’t need to step outside your pantry to make these recipes. Pantry meals are some of my favorite things to make and I resort to pantry recipes often, especially when I haven’t had the time to do my shopping for the week. So even if you haven’t panic-shopped before the lockdown, don’t worry, the ingredients in these recipes are our regular pantry items that you would anyway have with you, even if you are not a hoarder like yours truly. Let’s begin!

Leftover chicken spaghetti

Basil leaves and capsicum are not absolute musts in this recipe and if you don’t have fresh cream , use fresh milk or coconut cream. This versatile recipe is a wholesome dinner that can serve the entire family.

Rice congee

Come on, we are Sri Lankan. We all have rice and chicken right at home. As simple as this sounds, this is one of my absolute favorite meals to have at home, especially when I’m needing some comfort food to tuck into. Let this congee be your best friend these difficult times.

Bacon and egg quiche

Minimum ingredients, fanciest meal. Everybody’s got some bacon stored away in the fridge (if you don’t, we can’t be friends). Seriously though, if you haven’t got any bacon, simply use a leftover meat or some veggies of your choice. I swear, you just can’t go wrong with this one.

Gratin Dauphinois (Potato gratin)

Don’t be fooled by the fancy name, this is a simple potato gratin that can be whipped up with minimal ingredients. Forget the double cream, substitute t with coconut cream or milk. Use only one type of cheese. You’ve got yourself a meal.  

Apple and cheese loaf

Bake one of these and you are all set for breakfast for a few days at least. Okay so other than the usual pantry items, you will need apple and cheese for this one. Any kind of cheese really. I for one, always have a stock of apple and cheese at home. Why? Wine!  

Easy dinner rolls with curry leaves

We all have a curry leaf tree growing in our backyard. Those of us who don’t, we always have some stored in the fridge.

Whip up a batch of these dinner rolls and pair it up with the Chinese Tea Eggs below. I swear, you only need a dab of butter to have a wholesome and delicious meal.

Chinese Tea eggs

Everybody has a carton of eggs and everybody, even the least culinary amongst us have a bottle of soy sauce stored away at a corner of a cupboard. Also tea. We are in Sri Lanka after all.

If you want to spruce up your boring ol’ egg, here’s something to make you feel fancy with minimum effort and ingredients. Pair it up with the easy dinner rolls above and you’ve got yourself a meal.

Homemade yogurt

Forgot to shop for yogurt but have some milk to spare? All you need is a spoonful of yogurt from a previous yogurt to make this one.

Amma’s Sri Lankan Bread pudding

Got bread, milk, eggs and sugar? This super easy bread pudding is your friend. And if you’ve got a sweet tooth, this is perfect as a breakfast as well.

Healthy chocolate mousse

Going out for sinful desserts is no longer an option. If you’ve got milk, eggs, a chocolate (or two) at home, you can easily whip up this wonderfully luscious recipe. Skip the Amaretti cookies, I’m pretty dure you have some Marie biscuits at home.
